If you ever set foot in Batangas, don't you ever miss the chance of eating Batangas Lomi. It is not an authentic trip to Batangas if you don't the chance to eat our famous Lomi. In case you just missed it, or if you are craving to have it again, here is a recipe that you can try for yourself.
Ingredients:
- 1 lb egg noodles
- 3 cloves garlic, minced
- 1 onion, minced
- 1/4 lb kikiam, cooked and sliced
- 1/4 lb pork strips
- 5 pcs meatballs, cooked
- 3 tbsp cassava flour
- 1/4 lb ham, chopped
- 1/4 lb pig liver, sliced
- 1 1/2 tbsp fish sauce
- 1 tsp ground pepper
- 1tbsp soy sauce
- 6 cups pork or beef broth
- 1cup pork chicharon
- 1 pc raw egg
- 2 tbsp scallions, chopped
- 2 pcs hard-boiled eggs
- 2 tbsp cooking oil
Cooking Procedures:
- Heat the oil in a cooking pot
- Saute garlic and onion
- Add sliced pork and cook until medium brown
- Add the ham and liver
- Put soy sauce and fish sauce
- Pour in the broth and boil. Simmer until the meat are tender for about half an hour
- Add meatballs and kikiam. Simmer for another 3 minutes.
- Add ground pepper and egg noodles and cook for 5 to 7 minutes
- Dilute cassava flour in water and add to the pot. Cook until sauce is thick.
- Turn off heat. Pour raw, beaten egg and stir until egg is mixed evenly
- Transfer to a bowl and top with chicharon and sliced eggs
- Mix soy sauce, lemon and chili on a small plate and use as a condiment
- Serve hot
