Batangas Nilupak Recipe

We have a tradition in Batangas that is called "Lupakan". It is an event usually done as a get together of friends and sometimes as a way to welcome guests. The youth gather together to make our favorite nilupak which is done by pounding either cooked banana or cassava with some other ingredients. It is a chance for boys and girls to meet as we prepare the food. A chance also for the guys to show their strength while pounding the ingredients on a giant mortar and pestle.
What a way to reminisce about those days of making Batangas Nilupak. Those days, however, are long gone, and to remember those days we will share a simple recipe to you just in case you are one of those fans of nilupak or if you are curious just to try this out.

Ingredients:

  • cassava or banana
  • grated coconut
  • sugar
  • salt
  • butter
  • peanut butter
  • orange soda
  • cheese
(Note: there are no specified amounts as everything must be done based on your preference)

Procedures:

  1. Peel and cut the cassava or banana into sizes that will fit inside your mortar
  2. Cook in salted water until tender
  3. Remove from fire and allow to cool for a while
  4. Make together the grated coconut, sugar, and salt
  5. Place the cassava or banana on the mortar and start pounding until evenly mashed and sticky
  6. Add the coconut sugar and salt mixture and continue pounding until well incorporated
  7. Add peanut butter and orange soda to the mixture and pound again
  8. Remove from the mortar and place on a butter greased pan
  9. Top off with peanut butter and grated cheese
  10. Enjoy Batangas Nilupak while daydreaming about our younger days
